This is a friend's recipe that they gave to me. It's delicious! The best sweet potatoes ever in my opinion.
*It is easiest to cut the sweet potatoes into disks that are about an inch thick, then boil them until you can stick a fork into them easily. Then let them cool for just a bit (so you don't burn your fingers) then peel them and mash (I even cut them a big smaller to mash)
- Preheat the oven to 325
- 3 cups of mashed sweet potatoes (3 medium sized potatoes)
- 1 Cup of Sugar, 2 Eggs, 1/2 cup of butter, 1/3 cup of milk
- Mix that together and put into buttered/greased casserole dish
- The Topping: 1 Cup of Brown sugar, I cup of chopped pecans (optional) 1/3 cup of flour, 1/3 cup of butter (ALL BUTTER SHOULD BE SOFTENED/MELTED for this recipe)
- Sprinkle the topping on top and bake at 325 until set (about 35-45 minutes)
