Katie's Cheesy Squash & Zucchini Casserole-AMAZING!!!




Cheesy Squash & Zucchini Casserole

Ingredients:
3 squash
3 zucchini
½ cup mayo
            ½ cup light sour cream
            Dried basil
            ¾ cup breadcrumbs
            1 cup shredded cheddar cheese
            Onion salt (or one sweet onion) *I used onion salt*
            Salt and pepper to taste
            Parmesan cheese
            2 tablespoons melted butter
            Garlic powder
            A few handfuls of crumbled town house or Ritz crackers

Directions:
1.     Pre-heat oven to 365 degrees.
2.     Cut squash and zucchini into half-moons and boil on the stove until tender
3.     Pour into a square greased casserole dish
4.     Mix everything but ½ of the parmesan and cheddar cheese, the cracker crumbles, butter and garlic powder together in the casserole dish
5.     Sprinkle rest of the cheese on top of the casserole mixture
6.     Melt butter and mix a little bit of garlic powder with it
7.     Crumble handfuls of crackers on top of the casserole. I just eye balled it.
8.     Then brush the top with butter and garlic powder mixture.
9.     Bake at 365 degrees for 25-30 minutes.
